Steps to make delicious Bhuna Gosht:
Chef's tip: For best results, cook as per the steps mentioned above.
- This step is optional but highly recommended for tender meat. Marinate the mutton pieces with yogurt, lemon juice (optional), ginger-garlic paste, and some spices like coriander powder, cumin powder, and red chili powder for at least 30 minutes, or ideally overnight.
- Heat oil in a pressure cooker or a heavy-bottomed pan over medium heat. Add the chopped onions and sauté until golden brown.

Add the ginger-garlic-chili paste and cook for a minute, releasing the flavors. Then, add the chopped tomatoes and cook until they soften and turn mushy.

Add the marinated mutton pieces (if using) or simply add the mutton pieces and fry for a few minutes until browned on all sides.

Pour in about 1.5 - 2 cups of water (depending on your desired gravy consistency). Cover the pressure cooker and cook for 4-5 whistles (if using) or simmer on the stovetop for 45 minutes to 1 hour, or until the mutton is tender. You can check for tenderness by piercing the meat with a fork - it should be able to be easily shredded.

Once the mutton is tender, add the Shahi Riwayat Bhuna Gosht Masala and stir well. Cook for a few minutes, allowing the flavors to infuse with the meat. Continue cooking on low heat until the oil starts to separate from the gravy.

If the gravy is too thick, you can add a little more water or broth to adjust the consistency. Taste the gravy and add salt if needed (depending on the salt content in the masala).
